Oatmeal Cookie Sandwiches

Last night I got out my old recipe book that I bought from an antique store and decided to try a cookie recipe. The book was published in 1961 so I was very curious to see how they would taste. I didn't add the raisons because I didn't have any and I think that is what made them not taste very sweet. I thought it would be really good to whip up a buttercream frosting and make them into sandwiches. My family loved them :) Next time I'll add the raisons and compare.

Cookies:

1/2 cup flour
1/3 cup sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon cinnamon
1 1/2 cups rolled oats
1/2 cup raisons (I didn't add these)
1 egg, slightly beaten
1/2 cup milk
1/2 teaspoon vanilla
1/4 cup oil

Mix together flour, sugar, salt, baking powder, cinnamon, oats and raisons.

Combine egg, milk, vanilla, and oil, and add to first mixture. Stir only until moistened.

Drop dough by teaspoonfuls onto greased baking sheet ( I used parchment paper for easier clean-up ). Bake at 375°F about 18-20 minutes. Makes 16 cookies.

When the cookies are cool to the touch you can spread the frosting and sandwich them together.

Buttercream Frosting:

1 3/4 cups confectioners sugar
1/4 cup butter softened
2-3 tablespoons milk
1/2 teaspoon vanilla

Combine ingredients in large bowl. Beat at medium speed until creamy.

If an elephant is creating beauty...

why am I not using my gifts as much as possible to share with the world?

What sound looks like...

This is so interesting, kind of alien! I love knowing that sound creates art! I wonder what my voice looks like?

I'm participating in Abbey Hendrickson's
Russian Nesting Doll swap. I finally finished them two days ago and shipped them to her. It was hard to let them go, but this is why I needed the challenge because I have always had a hard time letting go of my art. If I expect selling my art soon I need to start practicing saying goodbye.

More garden photos and an update picture of one of the kittens. It is so hard to take clear pictures of them with my camera. They are so wobbly :)
